Brisket Burnt Ends

Ingredients

  • 1 whole Brisket
  • 1/4 Cup Salt, Kosher
  • 1/4 Cup cracked Black Pepper
  • 1 tbsp Granulated Garlic
  • 1/2 Cup Brown Sugar
  • 1 Cup Barbecue sauce of choice
  • Mesquite wood chips

Method

  1. Preheat smoker to 255F.
  2. Mix salt, black pepper, and granulated garlic, and rub on the brisket.
  3. Smoke the brisket for 6 to 8 hours, or until it reaches an internal temperature of 165F.
  4. Remove brisket off the smoker, wrap in butcher paper and return to the smoker until it reaches an internal temperature of 190F.
  5. Remove brisket off smoker, wrap it, and cut the meat into 1.5 inch cubes
  6. Place cubes in aluminum pan, coat with brown sugar and barbecue sauce, and finish cooking in the smoker for 1-2 hours, until all pieces are caramelized.
  7. Serve with your favorite sides, and enjoy! 

Smokin' Ribs

Ingredients

For Ribs

  • 1 rack Baby Back Ribs
  • 4-6 Tbs. LifeSpice Smokin’ BBQ Seasoning

For BBQ Sauce

  • 1/2 cup Brown Sugar
  • 1/4 cup Soy Sauce
  • 2 Tbs. Apple Cider Vinegar (or any vinegar you have)
  • 1 Tbs. Dijon Mustard (optional, for a bit of tang)
  • 1 Tbs. Smokin Seasoning

Method

  1. Set your over for 300°F.
  2. To prepare ribs, flip ribs over so that the meatier side is face down, and find the silver skin membrane on the back of the rib rack. Carefully using a knife, slice the end of the membrane away from the ribs, and then grip and pull the membrane from the rest of the rack.
  3. Place meatier side down on foil, and rub liberally with Smokin’ BBQ Seasoning. Flip and do the same to the other side.
  4. Wrap well in foil, and place on a sheet tray. Bake for 2 hours at 300°F, flipping ribs once halfway.
  5. While ribs cook, prepare sauce by combining all ingredients in a bowl. Set aside.
  6. Once 2 hours pass, remove ribs from oven, and increase heat to 500°F. Open foil carefully (lots of steam). Ribs should be fork tender.
  7. Place back in oven for 10-15 minutes, then remove and brush liberally with BBQ Sauce. Return to oven for 10-15 minutes, or until outside is glazed and crispy.
  8. Remove, rest for 10 minutes, slice, and enjoy!

Chef Renan's Butter Burgers

Ingredients

Burger

  • 1 lb Beef, ground
  • 2 tbsp Burger Seasoning
  • 1 tsp Black Pepper
  • 1 tsp Extra Virgin Olive Oil 

Burger Sauce

  • 1/2 C Mayo
  • 2 tbsp Yellow Mustard
  • 3 tbsp Ketchup
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp Dill Pickle, chopped
  • 1 tbsp Red Onion, chopped
  • 1 tsp Red Wine Vinegar
  • Salt and Pepper, to taste

Method

  1. Combine all the burger ingredients and form into patties.
  2. Cook the burger patties on a flat top or grill until they reach an internal temperature of 135F. Remove patties from heat and let rest for 2 minutes.
  3. Mix all the burger sauce ingredients until combined, and spread on top and/or bottom burger buns.
  4. Assemble burger with your favorite toppings and serve!

Awesome Wings

Ingredients

  • 2 Tbs. Kosher Salt
  • 3 Tbs. Awesome Anything LifeSpice Seasoning Blend
  • 2 cans Beer, (we used Bell’s Oberon but any beer you enjoy would work!)
  • 3 -4 lbs. whole Chicken Wings

Method

  1. Whisk together beer, salt and seasoning blend. Place chicken in a large ziplock bag and pour liquid over top. Refrigerate overnight, turning over at least once to ensure all wings soak up the same amount of brine.
  2. Prep smoker or grill to 215°F and smoke wings for approximately 2 hours. Internal temperature needs to be at least 165°F and skin should be crisp.

Grilled Watermelon Feta Salad

Salad Ingredients

  • Watermelon
  • Feta
  • Mint
  • Micro greens or arugula

Salad Dressing

  • Olive Oil, to taste
  • Balsamic Glaze, to taste
  • Salt, to taste

Method

  1. Cut & grill watermelon, crumble feta, chop mint.
  2. Mix greens with salad dressing and arrange watermelon, feta, and mint on top.
