Chicken Croquettes

Ingredients

For Chicken

  • 2.2 lbs. Chicken Breast
  • 6 Tbs. LifeSpice Poultry Perfection Seasoning
  • 2 cups Cream Cheese
  • 2 Tbs. Canola Oil

For Dough

  • 15 ounces All-Purpose Flour
  • 3 cups Milk
  • 2 Tbs. Butter
  • 3/4 tsp Salt

Method

  1. For chicken, boil chicken breast until cooked through. Chicken should reach an internal temperature of 165°F. Cool slightly and shred.
  2. In a bowl, combine Poultry Perfection seasoning, cream cheese, oil, and shredded chicken. Mix until uniform.
  3. For dough, bring butter and milk to a simmer in a large saucepan. Be careful not to boil over. Reduce heat to low and add flour and salt. Stir until incorporated and cook for 1 minute.
  4. Remove from heat and cool. Flour a surface and knead dough until smooth. Cover until use.
  5. To make croquettes, form a flat disc of about 30 grams of dough. Place 12 grams of the chicken mix in the middle and close dough, trying to form a cone-type shape.
  6. Toss each in a fine breadcrumbs and deep fry in 355°F vegetable oil until golden brown and warmed through.
