Blackened Chicken Pasta

Ingredients

  • 2 Chicken Breasts
  • LifeSpice Cajun Blackened Rub
  • Olive Oil
  • 8 oz. pasta of choice
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup pasta water
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Method

  1. Coat the chicken breasts with olive oil, then generously rub the blackened seasoning all over the chicken.
  2. Heat a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for about 5-6 minutes on each side, or until the chicken is blackened on the outside and cooked through on the inside. The internal temperature should reach 165°F.
  3. Once cooked, remove the chicken from the skillet and let it rest for a few minutes before slicing into thin strips.
  4. While the chicken is cooking, bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta and set it aside, reserving pasta water.
  5. In the same skillet used to cook the chicken, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant.
  6. Pour in the pasta water and heavy cream, stirring to combine. Let the sauce simmer for about 5 minutes, allowing it to thicken slightly.
  7. Remove from heat and stir in the grated Parmesan cheese until the sauce is smooth and creamy. Season the sauce with salt and pepper to taste. Toss pasta in sauce.
  8.  Plate pasta and top with sliced chicken.
