Chamoy Pickle Egg Salad Sandwich

This egg salad combines creamy, tangy, and slightly sweet flavors with a punch of chamoy pickle seasoning. The addition of dill pickles and extra acidity keeps everything balanced and bright.
Ingredients
- 6 hard-boiled eggs, chopped
- ¼ cup mayonnaise
- 1 tsp yellow mustard
- 2 tbsp pickle relish
- 2 tbsp finely chopped dill pickles (lean savory vs. sweet)
- 1 tsp chamoy pickle seasoning, plus more to taste
- 1–2 tsp pickle juice
- 1 tbsp chopped green onions or chives
- Salt & black pepper, to taste
- Bread of choice
Method
- Chop eggs into small pieces.
- In a bowl, mix mayo, mustard, relish, chamoy pickle seasoning, and pickle juice. Fold in eggs, chopped pickles, and green onions.
- Taste and adjust:
- Add more pickle juice or mustard for more bite
- Add more mayo for more savory creaminess
- Add black pepper or a pinch of salt for balance
- Chill 20–30 minutes before serving.
- Spread on your favorite bread!
