Ingredients
For Chicken
- 2.2 lbs. Chicken Breast
- 6 Tbs. LifeSpice Poultry Perfection Seasoning
- 2 cups Cream Cheese
- 2 Tbs. Canola Oil
For Dough
- 15 ounces All-Purpose Flour
- 3 cups Milk
- 2 Tbs. Butter
- 3/4 tsp Salt
Method
- For chicken, boil chicken breast until cooked through. Chicken should reach an internal temperature of 165°F. Cool slightly and shred.
- In a bowl, combine Poultry Perfection seasoning, cream cheese, oil, and shredded chicken. Mix until uniform.
- For dough, bring butter and milk to a simmer in a large saucepan. Be careful not to boil over. Reduce heat to low and add flour and salt. Stir until incorporated and cook for 1 minute.
- Remove from heat and cool. Flour a surface and knead dough until smooth. Cover until use.
- To make croquettes, form a flat disc of about 30 grams of dough. Place 12 grams of the chicken mix in the middle and close dough, trying to form a cone-type shape.
- Toss each in a fine breadcrumbs and deep fry in 355°F vegetable oil until golden brown and warmed through.
