Chili Tamarind Peach Parfait

Ingredients

  • ½ cup vanilla coconut yogurt
  • 1 ½ tsp Chia Seeds
  • 2 tsp Butter
  • 2 cups Frozen Peaches
  • 1 Tbs Lime Juice
  • 2 Tbs Chili Tamarind Seasoning
  • ¼ cup Sugar

Method

  1. In a small bowl, stir the chia seeds into the vanilla coconut yogurt. Let sit for at least 10 minutes (or overnight) in the fridge to thicken.
  2. In a saucepan over medium heat, melt the butter. Add the frozen peaches, lime juice, and sugar. Cook for 8–10 minutes, stirring occasionally, until the peaches are soft and the sauce thickens slightly. Remove from heat, season with Chili Tamarind Seasoning, and cool to room temperature.
  3. In two glasses or jars, layer the chia yogurt and spiced peaches. Start with a spoonful of yogurt, then peaches, and repeat until the glasses are full.
  4. Sprinkle a pinch of chili tamarind seasoning, any crunchy toppings you like, or a few fresh mint leaves on top for extra flavor and texture!
