LifeSpice Expands Seasoning Analytics Platform with New GC-MS Capability

LifeSpice has expanded our analytical capabilities with the addition of a Gas Chromatography–Mass Spectrometry (GC-MS) system. This new capability enhances our ability to better understand what drives flavor, supporting faster seasoning development, and more precise flavor matching.
A GC-MS system identifies the compounds responsible for key flavor characteristics in seasonings. By breaking down complex flavor systems into individual components, it provides a detailed “flavor fingerprint” and a clearer picture of how a seasoning’s flavor is built.
The impact of the system is driven not only by the technology itself, but by the expertise needed to operate and interpret it. Understanding this, we have also added an experienced Analytical Chemist at LifeSpice who will help translate complex data into actionable insights for our R&D team. This added data allows LifeSpice to better understand which compounds have the greatest impact on flavor. When combined with sensory evaluation and formulation expertise, it supports a more targeted and efficient approach to development.
The addition of a GC-MS system also strengthens LifeSpice’s MatchMaker seasoning matching program. By analyzing target products at a deeper level, our team can more accurately identify key flavor drivers, refine ingredient selection, and make more precise adjustments throughout the process. The result is faster progress toward accurate matches, along with improved ability to troubleshoot and optimize formulations when needed.
