Our New GC-MS System

A new tool for seasoning matching and development

At LifeSpice, we combine culinary creativity, ingredient expertise, and food science to develop seasonings that stand out in the market. We’re continuously enhancing our approach to help our clients innovate faster, develop and match sophisticated flavor systems, and create truly differentiated products that resonate in the market.

Recently, we added a new capability to our process: GC-MS (Gas Chromatography–Mass Spectrometry). While the name may sound technical, the benefits of this technology are straightforward – it helps us better understand what’s actually driving flavor in a product. For our customers, this translates to faster development, more precise flavor matching, and greater consistency.

What is a GC-MS?

Understanding the Gas Chromatography–Mass Spectrometry System

GC-MS is a tool used to identify the aroma compounds present in food or seasoning. These compounds are responsible for much of what we perceive as flavor – especially the distinct notes like roasted, savory, cheesy, woody, or floral.

As part of our Peak Seasoning Analytics approach, we utilize our GC-MS to break down complex flavor systems into their individual components. During analysis, the system separates a product into its individual compounds and identifies each compound based on its molecular structure – giving us a clear, detailed picture of what’s driving flavor.

The result is a visual output: a graph with a series of peaks. Each peak represents a specific aroma compound and its relative intensity. Together, these peaks form a detailed “flavor fingerprint.”

Gas Chromatography

The gas chromatography portion of the system is responsible for separating a complex mixture into individual compounds. When a sample is introduced, it is carried through a column on a gas. Each compound travels at a slightly different speed, which allows them to be separated over time.

This step is critical because it isolates each component of a flavor system, so it can be analyzed individually, rather than as part of a complex mixture.

Mass Spectrometry

Once the compounds are separated, they move into the mass spectrometer. Here, each compound is identified based on its molecular structure.

The system compares the compound to known reference data, allowing us to determine what each peak represents. This gives us a clear understanding of which specific aroma compounds are present in a product.

Analytics & Interpretation

While the instrumentation is powerful, the real value comes from how the data is interpreted.

The output of a GC-MS analysis is a complex set of peaks and compound data. Understanding which of those compounds actually impact flavor – and how they relate to real-world ingredients – requires experience and expertise. Our scientists will analyze results from the GC-MS, identify meaningful patterns, and translate those findings into actionable insights to apply in formulation.

A GC-MS system allows us to better understand which compounds are most important in defining a product’s flavor profile. This can help our developers both when they are matching existing seasonings, or developing new concepts.
