Grilled Lamb Chops with Mint Sauce

Lamb Chop Ingredients

  • Rack of Lamb
  • 1/2 cup Olive Oil
  • 4 Garlic Cloves
  • LifeSpice Smokin’ Seasoning, to taste

Lamb Chop Method

  1. Chop the garlic, mix the olive oil, garlic and LifeSpice Smokin’ seasoning in the bowl.
  2. Rub the rack of lamb with marinade and let it marinade at least 1 hour or more in the fridge.
  3. Set the gas grill to high heat. Grill the lamb over direct high heat for 3-4 minutes on each side.
  4. Move the meat to indirect heat, put the lid on the grill and let it cook until it reaches 125F internal temperature (for medium rare), or about 15 minutes. Let it rest for 5 min before carving it.

Mint Sauce Ingredients

  • 1 Cup Mint
  • 1 Granny Smith Apple
  • Olive Oil, to taste
  • Lemon Juice, to taste
  • Honey, to taste
  • Salt, to taste

Mint Sauce Method

  1. Blend all the ingredients in food processor. Serve it with lamb.

     

Grilled Watermelon Feta Salad

Ingredients

Salad Ingredients

  • Watermelon
  • Feta
  • Mint
  • Micro greens or arugula

Salad Dressing

  • Olive Oil, to taste
  • Balsamic Glaze, to taste
  • Salt, to taste

Method

  1. Cut & grill watermelon, crumble feta, chop mint.
  2. Mix greens with salad dressing and arrange watermelon, feta, and mint on top.
