Nam Prik Pao Popcorn Chicken

Ingredients

  • 1 lbs. Chicken Thighs, cut into large cubes
  • 1/4 cup Potato Starch
  • 1/4 cup Corn Starch
  • 1/4 tsp. Salt
  • 3 Tbs. Pow! Nam Prik Pao Seasoning
  • Vegetable Oil for Frying

Method

  1. Season chicken with salt and 1 Tbs. of Nam Prik Pao seasoning.
  2. Mix potato and corn starch together. Toss seasoned chicken in starch mixture.
  3. Heat oil to 375°F in a large, tall pot for frying. Fry chicken in batches, being careful not to crowd the pan, until golden brown. The internal temperature of the chicken should reach 165°F.
  4. Toss chicken while still hot in a large bowl with the remaining Nam Prik Pao seasoning.
  5. Serve hot!
