Spicy Giardiniera Fried Chicken Sandwiches

Ingredients

  • 4 Boneless Skinless Chicken Thighs
  • 5 C Buttermilk
  • 2 C AP Flour
  • 2 T LifeSpice Spicy Giardiniera Seasoning
  • 1 t Salt
  • ½ head Green Cabbage, shaved thin
  • 1 Carrot, peeled and grated or fine julienned
  • 1 C Mayonnaise
  • ¼ c Giardiniera and liquid
  • 1 t Paprika
  • 2 qt desired Frying Oil
  • 4 Burger Buns

Method

  1. Add chicken into a bowl and cover with all but 2T of buttermilk. Set excess buttermilk aside.
  2. Add salt and 1T of LifeSpice Spicy Giardiniera seasoning to chicken, cover and place in the fridge to marinate
  3. Add the Giardiniera and liquid, mayonnaise, remaining buttermilk, and paprika to a blender. Blend the mixture until smooth.
  4. Add the shaved cabbage and carrots to a bowl and dress with the Giardiniera dressing. Toss until evenly coated, cover and set in the fridge
  5. Add oil to a dutch oven and heat until 350°F.
  6. Place flour in a bowl. Place the chicken in the flour and evenly coat. Add the flour back into the buttermilk, then back again into the flour until completely coated. Shake off excess flour and set on a sheet pan
  7. Fry chicken in hot oil for about 5-6 minutes, or until the exterior is golden brown and the interior registers 165°F on a meat thermometer.
  8. Remove the chicken with a spider strainer into a bowl and toss with the remaining LifeSpice Spicy Giardiniera seasoning. Place on a wired rack to continue draining.
  9. Toast the buns if desired, then place a chicken thigh on the bottom bun, top with a generous portion of the slaw, and then place on the top bun.
