Fried Chicken Pickle Tenders

Ingredients

Marinade

  • 2 lbs Chicken tenders
  • 1.5 C Buttermilk
  • 1.5 tsp Kosher Salt
  • 1/4 C Pickle Juice

breading

  • 1.5 C All-Purpose Flour
  • 1.5 tsp Baking Powder
  • 1 tsp Kosher Salt
  • 3 Tbsp Buttermilk
  • Dill Pickle Seasoning, to taste

Method

  1. In a bowl, combine salt, tenders, pickle juice, and buttermilk, and marinate for 1 hour. 
  2. In a bowl, mix salt, flour, and baking powder until fully combined.
  3. To the dry mixture, add buttermilk and stir with a fork until the mixture is evenly clumpy. This will be the breading mixture.
  4. Remove the tenders from the buttermilk marinade and toss in the breading mixture. 
  5. Make sure to press the chicken firmly into the breading so clumps adhere to the tenders.
  6. Fry the tenders at 350F until they reach internal temperature of 165F.
  7. Sprinkle dill pickle seasoning to taste over tenders. Enjoy!
