Pineapple Shrimp Rice Boat

Ingredients

  • 1 lb. Shrimp
  • 1 ea. Pineapple
  • 1 Cup Fresh Corn
  • 1 ea. Onion
  • 1 Cup Diced Pineapple
  • 1 ea. Red Bell Pepper
  • 1 ea. Green Bell Pepper
  • 2 Cups Rice, cooked
  • LifeSpice Hurricane Seasoning, to taste
  • Salt, to taste
  • Pepper, to taste
  • Olive Oil, for cooking
  • Scallions and Cilantro, for garnish

Method

  1. Split your pineapple in half, carve out the fruit in the middle, remove the core, and discard. Dice the fruit from the pineapple and set aside.
  2. Cook rice according to the instructions.
  3. Saute onions, corn, bell peppers, and pineapple in a skillet, and season with salt, pepper, and LifeSpice Hurricane seasoning. Set aside.
  4. Rinse the shrimp, pat them dry, drench them in LifeSpice Hurricane seasoning and cook in oil over the medium high heat. Cook for about 2-3 minutes per side, until shrimp turn pink and opaque.
  5. Mix rice, cooked veggies and shrimp together. Fill the pineapple with rice mixture, garnish, and serve.
