Seasonings Greetings Crackle Cookies

Ingredients

  • 1½ sticks Unsalted Butter
  • ⅔ cup packed Dark Brown Sugar
  • ½ cup Molasses
  • 1 Tbsp. Chinese five-spice seasoning
  • 1 Tbsp. Seasonings Greetings Seasoning
  • 1 large Egg Yolk
  • 1 Tbsp. Vanilla Extract
  • 2¾ cups All-Purpose flour
  • 1¼ tsp. Kosher Salt
  • 1 tsp. Baking Soda
  • ½ cup Granulated Sugar
  • ¾ cup Powdered Sugar, sifted

Method

  1. Preheat oven to 375F.  Brown your butter on the stove over medium-low heat until golden and nutty scent. Stir frequently to prevent burning. Immediately transfer to large mixing bowl.
  2. In a large mixing bowl, whisk together dark brown sugar, molasses, and the seasonings until well incorporated, about 2 minutes.
  3. To the mixing bowl, add one whole egg yolk and vanilla extract. Continue whisking until well incorporated, about another 2 minutes
  4. Add flour, baking powder, and salt to the wet mixture in the mixing bowl. Using a spatula, fold the mixture together until a soft dough forms. 
  5. Place granulated sugar in a small bowl. Roll out balls of dough, roughly 3 tablespoons each, and roll in granulated sugar. Place on a baking sheet lined with parchment paper. Once rolling all the dough balls in sugar, repeat the process to double coat them.
  6. Once all the dough balls have all been rolled in the granulated sugar, place the dough and baking sheets in the freezer for exactly 15 minutes. Freezing the dough will help form the crackle pattern on the cookies while they are baking.
  7. Prepare a bowl with the powdered sugar. After dough has been in freezer for 15 minutes, remove from freezer and roll each dough ball in the powdered sugar. 
  8. Place coated dough balls in the oven for 12-14 minutes, rotating about half way. Remove cookies from oven and let cool for a few minutes before enjoying.
