Mascarpone & Shaved Watermelon

Ingredients

  • 200g Mascarpone
  • 10g Lemon Juice
  • 1 Tbsp Lemon Zest
  • 20g Honey
  • 200g Heavy Cream
  • Watermelon
  • LifeSpice Chili Tamarind Seasoning, to taste

Method

  1. Cut the watermelon into chunks and remove any seeds. Coat the watermelon chunks with Chili Tamarind seasoning.
  2. Freeze the watermelon chunks solid (at least 4 hours or overnight). Once frozen, shave the watermelon using a microplane or box grater. Keep frozen until ready to serve.
  3. In a mixing bowl, whisk the mascarpone with honey, lemon juice, and lemon zest until smooth. In a separate bowl, whip the cold heavy cream to soft peaks.
  4. Gently fold the whipped cream into the mascarpone mixture in batches until fully incorporated and airy. Chill the mousse for at least 1 hour to set. Optionally, you can add some seasonal fruit or fresh berries to the mousse mixture.
  5. Spoon or pipe the mascarpone mousse into serving glasses or bowls.
    Top generously with shaved frozen watermelon. Drizzle with honey, and sprinkle lightly with Chili Tamarind seasoning for a spicy kick.
