Queso Verde Quesadillas & Guacamole

Queso Verde Quesadilla

Ingredients

  • 3 lbs Pork Shoulder, cut into large cubes
  • 2 Yellow Onions, cut in half
  • 3 Roma Tomatoes, cut in half
  • 1/2 Cup LifeSpice Queso Verde Seasoning
  • 1 lb Oaxaca Cheese, shredded
  • 5 large Flour Tortillas
  • 7 oz Yellow Onion, diced
  • 7 oz Red Bell Pepper, diced

Method

  1. In a pressure cooker, add the pork shoulder, onion, tomato and add water until just covered. Cook in high pressure for 1 hour.
  2. Release the pressure of the cooker and remove the meat from the liquid. Discard the rest. Shred the pork.
  3. Add the seasoning to the pork and incorporate until fully mixed. Taste and adjust salt and pepper.
  4. On a skillet on medium heat, saute pepper and onion until golden. Reserve on the side.
  5. On a skillet (or flat top) on medium heat, place the tortilla. 
  6. Spread about 3.5 ounces of cheese on half of the tortilla, and top with onion, pepper, and seasoned pork. Fold the tortilla in half and let it brown each side until cheese melts. (Tip: the slower you heat the tortilla, the better the result. The cheese with have time to fully melt before the tortilla burns.)
  7. Serve with your favorite toppings, like guacamole, sour cream, or some salsa. Enjoy!

Chili Tamarind Guacamole

Ingredients

  • 3 Haas Avocados, ripe
  • 1 Lime, juiced
  • 1 Shallot, diced
  • 1 Jalapeno, diced
  • 2 Tbsp Cilantro, chopped
  • 1 tsp Tabasco
  • 1 Roma Tomato, diced
  • Salt, to taste
  • LifeSpice Chili Tamarind Seasoning, to taste

Method

  1. Smash the avocado into a chunky cream, either by hand (wearing gloves) or with a fork.
  2. Mix the rest of the ingredients into the avocado until evenly combined.
  3. Taste it and adjust to your liking with salt and Chili Tamarind Seasoning, to taste.
  4. Sprinkle some of the Chili Tamarind seasoning on top of the finish guacamole before serving. Enjoy!
