Awesome Short Ribs

Recipe: Adapted by LifeSpice from Alison Roman’s NYT Cooking Garlic Braised Short Ribs with Red Wine

Ingredients

  • LifeSpice Awesome Anything Seasoning
  • Salt and Pepper
  • 2 lbs. Bone In Short Rib
  • 1 head Garlic
  • 1 Small Onion, diced
  • 1 Carrot, chopped
  • 2 ribs Celery, chopped
  • 1.5 Tbs. Tomato Paste
  • 1 cup Dry Red Wine
  • 1 cup Beef Broth or Stock
  • 4 sprigs Thyme
  • Chives and Lemon Zest to garnish

Method

  1. Heat your oven to 275°F. Season your short ribs liberally on all sides with Awesome Anything seasoning, and a small amount of salt and pepper.
  2. In a dutch oven, heat a high heat neutral oil over medium-high heat and, working in batches, sear each side of the short ribs. Remove from heat and set aside.
  3. Slice your garlic head in half crosswise, and cook in same dutch oven, cut sides down, over medium heat until golden brown. Add onion, celery, and carrot and cook until softened.
  4. Add tomato paste and stir to coat until caramelized. Add red wine and deglazed pan, scraping browned bits from the bottom of your dutch oven. Simmer for 2 minutes, and then add beef stock. Add your short ribs back to broth, along with your thyme, and bring to a simmer. Cover and remove from heat.
  5. Transfer to your oven and cook, undisturbed, until meat is fall-off-the-bone tender, about 3 1/2 to 4 hours.
  6. Serve with mashed potatoes (see below), and top with broth, chives, and lemon zest.

Marisa’s Mashed Potatoes

Ingredients

  • 3 Yukon Gold Potatoes
  • 3 Russet Potatoes
  • 4 Tbs. Butter
  • 1 cup Heavy Cream
  • 2 Tbs. LifeSpice Spicy Miso Garlic Seasoning (more to taste)
  • Salt

Method

  1. Peel your potatoes and place in cold water to rinse. After rinsing your potatoes, slice them into cubes.
  2. Place the cubed potatoes into a pot with cold water, season the water with salt, and bring to a boil.
  3. Once potatoes are boiling, reduce to simmer and cook until fork tender (about 15 mins). While potatoes are simmering, melt together butter and heavy cream on stove over low heat.
  4. Once potatoes are done cooking, drain water and use a potato ricer to press into a large mixing bowl. Incorporate the butter and cream mixture until a smooth potato texture is reached
  5. Once potatoes are smooth, incorporate the Spicy Miso Garlic seasoning and salt to taste. Serve immediately.
