Cowboy Coffee Sweet Potato Nacho Fries

Ingredients

  • 1 lbs. bag of frozen Sweet Potato Fries
  • 1 lbs. lean Ground Beef
  • 1/3 cup Cowboy Coffee Seasoning
  • 1 cup Shredded Cheddar
  • ¼ cup Sour Cream, at room temperature
  • 2 Green Onions, finely sliced
  • ¼ cup diced White Onion
  • ¼ cup Pickled Jalapeños
  • ¼ cup diced Tomatoes
  • 1 Tbs. Cornstarch
  • 1 Tbs. Cornmeal
  • ½ tsp. Kosher Salt
  • 1/2 Tbs. Oil

Method

  1. Preheat oven to 425 degrees.
  2. In a large skillet over medium heat, brown the ground beef. When nearly all the pink has gone from the beef, add the LifeSpice Cowboy Steak Rub and ¼ cup water and simmer for 2-3 minutes, or until sauce has thickened. Take off heat and cover to keep warm
  3. Toss the frozen sweet potato fries in the cornstarch, cornmeal, and kosher salt until well coated. Add oil and toss again. Spread the sweet potato fries on a lined sheet pan.
  4. Cook in the oven for 20-30 minutes, flipping once, until fries start to crisp on the edges. Take out of the oven.
  5. On a large plate, layer the hot fries with the beef mixture and the rest of your ingredients and serve immediately.
