Cowboy Coffee Sweet Potato Nacho Fries

Ingredients
- 1 lbs. bag of frozen Sweet Potato Fries
- 1 lbs. lean Ground Beef
- 1/3 cup Cowboy Coffee Seasoning
- 1 cup Shredded Cheddar
- ¼ cup Sour Cream, at room temperature
- 2 Green Onions, finely sliced
- ¼ cup diced White Onion
- ¼ cup Pickled Jalapeños
- ¼ cup diced Tomatoes
- 1 Tbs. Cornstarch
- 1 Tbs. Cornmeal
- ½ tsp. Kosher Salt
- 1/2 Tbs. Oil


Method
- Preheat oven to 425 degrees.
- In a large skillet over medium heat, brown the ground beef. When nearly all the pink has gone from the beef, add the LifeSpice Cowboy Steak Rub and ¼ cup water and simmer for 2-3 minutes, or until sauce has thickened. Take off heat and cover to keep warm
- Toss the frozen sweet potato fries in the cornstarch, cornmeal, and kosher salt until well coated. Add oil and toss again. Spread the sweet potato fries on a lined sheet pan.
- Cook in the oven for 20-30 minutes, flipping once, until fries start to crisp on the edges. Take out of the oven.
- On a large plate, layer the hot fries with the beef mixture and the rest of your ingredients and serve immediately.
