Natallia’s Savory Meat Pies

Ingredients
For the Dough:
- 3 C All-Purpose Flour
- 1 t Salt
- 2 T Sugar
- 1 1/2 Sticks Cold Butter, cubed
- 3 1/2 T Sour Cream
- 1/4 C Cold Water
For the Filling:
- 2 lbs Beef Chuck
- 1/2 lbs Mushrooms
- 1 Onion
- 1 Carrot
- LifeSpice’s Awesome Anything Seasoning, to taste
For Assembly:
- 2 Eggs
Method
For Filling:
- Preheat sous-vide to 180 F.
- Cut the vegetables.
- Season meat and vegetables with Awesome Anything seasoning.
- Place it in the sous-vide bag and cook it for 24 hours.
- Pull the meat apart and cool it down.
For Dough:
- Mix flour, salt, sugar, and butter in Kitchen Aid Mixer with paddle attachment. You should still be able to see the small particles of butter.
- Add sour cream, mix. Add water, until the dough comes together (you might not need all of it).
- Cover with plastic wrap and refrigerate for at least an hour before assembling the pies.
Assembly:
- Preheat oven to 400 F.
- Roll the dough to the desired shape.
- Fill with meat.
- Brush egg wash on top of dough.
- Bake 15 min at 400 F, lower the temperature to 350 F and finish baking them for another 10-15 min, until golden brown color.
