Smokin’ Guinness Stew

Celebrate St. Patrick’s Day with our Smokin’ Guinness Stew! Chuck roast, hearty Guinness beer, and of course, our signature Smokin’ BBQ Seasoning come together to create a warm, savory stew, perfect for your St. Patrick’s Day weekend.

Ingredients

  • 1 to 2 Tbs. Canola Oil
  • 3 ½ pounds Beef Chuck Roast, cubed
  • 1 Tbs. Kosher Salt
  • 1 tsp. Fresh Ground Pepper
  • 4 Tbs. Butter
  • 4 Garlic Cloves, minced
  • 4 oz. Frozen Pearl Onions, or 3 cups Chopped Fresh Onion
  • 4 Celery Stalks, sliced
  • ¼ cup Flour
  • 1 14.9-ounce can Guinness
  • ¼ cup Tomato Paste
  • 3 cups Beef Stock or Broth
  • ¼ cup LifeSpice Smokin’ Seasoning
  • 3 large Carrots, peeled and sliced, or ½ pound Baby Carrots
  • 1 pound Baby Potatoes, halved or quartered
  • 3 to 4 Fresh Bay Leaves, optional

Method

  1. Heat oil in a large Dutch over or heavy bottomed pot over high heat until shimmering. Season beef chunks liberally with salt and pepper. Working in batches, sear beef chunks on all sides. Remove to a plate.
  2. Reduce heat to medium-high and add butter to pot. Once melted, add garlic, onions, celery, and carrots. Cook, stirring frequently, until starting to brown, about 5 minutes.
  3. Sprinkle flour over mixture and continue to cook for 1 to 2 minutes, stirring constantly. Pour in some of the Guinness and stir, scraping up any brown bits. Add remaining Guinness along with the tomato paste, beef stock, and Smokin’ seasoning, stirring until completely mixed.
  4. Bring to a boil and stir in beef chunks along with any juices, carrots, potatoes, and bay leaves. Reduce heat to lower and simmer, covered, for 2 hours.
  5. Remove lid and continue to simmer 45 minutes, or until beef is fall-apart tender and the sauce has reduced to desired consistency. Taste and adjust seasoning if needed.
  6. Serve with crusty bread and pair with a glass of Guinness. Enjoy!
